  • ½ Avocado diced
  • ½ cup Mushrooms sliced
  • ½ cup Cherry Tomatoes
  • ¼ cup Basil
  • 1 cup Spinach
  • 2 ounces Roast Beef
  • ½ cup Parmesan
  • Salt and Pepper to taste

Instructions

  • Start by preparing all your ingredients—dice the avocado, slice the mushrooms, and halve the cherry tomatoes. Chop the basil and spinach.
  • Beat the eggs in a large bowl, then add the prepared ingredients along with the roast beef.
  • Transfer the mixture into a silicone basket suitable for the air fryer, sprinkle with Parmesan cheese, and set the air fryer to 320-350°F based on your air fryer. Cook for 15-20 minutes or until the frittata is golden and set.
