Sweet Potato with Empanada Beef Stuffing
6 sweet potatoes, baked
1 tablespoon canola oil
1 red onion, chopped
1 tablespoon garlic, minced
2 pounds of grass-fed Grass Roots ground beef
2 cup of black olives, sliced
4 hard boil eggs, chopped
½ cup of raisins
½ cup cilantro, chopped
1. Baked sweet potatoes in a preheated oven at 400F for one hour.
2. Sautee onions and garlic until onions become translucent for about two minutes.
3. Add the ground beef and cook it for about 8-10 minutes. Add remaining ingredients, mix well, and thoroughly cook. Add the cilantro at the end.
4. Cut sweet potatoes in half and add the beef empanada stuffing in the middle.
