How to Make A Scrumptious Vegetable Creamy Soup (Without the Cream)

If you are like me, during a cold winter day and especially after a busy day, you crave something delicious and comforting like warm creamy soup. I have partnered with the NDC to share with you today a delicious comfort food recipe, my Scrumptious Vegetable Creamy Soup made with milk and cheese. According to some recent study Americans are eating more comfort foods due to the pandemic and this makes a lot of sense to me. Comfort food brings happiness!  

For this recipe, I use lactose free milk since I myself am lactose intolerant. Lactose free milk is real milk just without the lactose, but still with all the great nutrition. I love this soup because not only is delicious but also provides a serving of dairy and vegetables. These are two food groups that Americans are not eating enough of to meet daily recommendations. Dairy foods can help make plant-packed recipes like this one to be even better by adding nutrients, flavor, texture and satisfaction.
