Peruvian Superfoods: Broccoli and Feta Cheese Omelet

Serves: 1


1/3 cup broccoli florets

2 eggs, large

1 once feta cheese

2 sprigs cilantro, chopped

Salt & pepper to taste

Cooking oil


1) Toss the broccoli florets into an oiled pan over medium heat for 3-5 min; set aside.

2) Crack and whisk two eggs in a mixing bowl, then pour mixture into pan over high heat. Spread egg mixture evenly in pan and cook until the mixture holds together.

3) Put the broccoli florets on top of the egg mixture in the center of the pan. Sprinkle over with cheese and cilantro.

4) Fold one-third of omelet over the center, then the other. Remove from heat and add salt and pepper to taste.
