Ingredients
- ½ cup low-fat cottage cheese
- ⅜ cup 2% Greek yogurt
- ½ cup frozen blueberries thawed (for blending)
- ½ Tbsp chia seeds
- ¼ Tbsp ground flaxseed
- ½ tsp honey
- ¼ tsp monk-fruit sweetener
- ½ tsp vanilla extract
- ¼ cup blueberries for topping
- ¾ Tbsp chopped walnuts
Instructions
- Blend cottage cheese, yogurt, ½ cup blueberries, honey, monk fruit, and vanilla.
- Stir in chia and flax.
- Chill 30 minutes or overnight.
- Top with remaining blueberries and walnuts.
