Ingredients

  • ½ cup low-fat cottage cheese
  • cup 2% Greek yogurt
  • ½ cup strawberries for blending
  • ½ Tbsp chia seeds
  • ¼ Tbsp ground flaxseed
  • ½ tsp honey
  • ¼ tsp monk-fruit sweetener
  • ½ tsp vanilla extract
  • ¼ cup sliced strawberries topping
  • ¾ Tbsp chopped pistachios

Instructions

  • Blend cottage cheese, yogurt, ½ cup strawberries, honey, monk fruit, and vanilla.
  • Stir in chia and flax.
  • Chill 30 minutes.
  • Top with fresh strawberries and pistachios.
