Air Fryer Peach Protein Cobbler

This warm peach cobbler is made with oat flour, protein powder, and maple syrup, baked in ramekins for a high-protein, 240-calorie treat.

Ingredients

  • ½ cup oat flour
  • 1 scoop vanilla protein powder ≈30g protein
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 whole egg
  • ¾ cup unsweetened oat milk Kirkland brand
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 15 oz can peaches in 100% juice, drained and diced
  • Cooking spray optional

Instructions

  • Preheat air fryer to 325°F.
  • In one bowl, mix oat flour, protein powder, baking powder, and cinnamon.
  • In another bowl, whisk the egg, oat milk, maple syrup, and vanilla.
  • Stir wet into dry mixture until smooth, then fold in the diced peaches.
  • Lightly spray four 6-ounce ramekins and divide the batter evenly.
  • Air fry at 325°F for 12–14 minutes, or until golden and cooked through.
  • Let cool slightly. Serve warm — optionally with a dollop of Greek yogurt or cinnamon drizzle.
