How To Make Peruvian Rice and Chicken (Arroz con Pollo)

This is one of my favorite Peruvian meals and it is one of my comfort foods. Make this amazing dish in 7 minutes.

Ingredients:

1 Whole chicken cut in pieces no skin
1 Red onion diced
4 Garlic cloves sliced
3 Celery sticks diced
1 Red bell pepper diced
1 Cup of carrots diced
1 Cup of frozen peas
2 Bunches of cilantro
2 Cups of brown rice
4 Cups of chicken broth
1Tbsp of olive oil
Salt & Pepper to taste
6 Cups of love

Serves: 6

Start Browning chicken pieces in a frying pan.  While chicken is frying sauté onion, garlic, celery, bell pepper and carrots.  In a blender liquefy cilantro with chicken broth.  After the vegetables mix is soft and lightly browned pour in the brown rice. Stir for a minute or two then pour in cilantro juice.  Wait until liquid starts to boil then add frozen peas.  On top of rice mix place chicken pieces and cover.  Cook at a low temperature for about 30 min to 45 minutes.  Enjoy and Eat Free!
