Healthy Beef Picadillo with Farro and Veggies

Ingredients

cups
cooked farro
▢
1
tablespoon
olive oil
▢
One medium red onion
diced
▢
1
tablespoon
crush garlic
▢
1
pound
of ground beef 10% fat or less
▢
1
can
14.5 ounces no sodium added diced tomatoes
▢
2
teaspoons
sea salt
▢
1/2
teaspoon
black pepper
▢
1
teaspoon
cumin
▢
1
tablespoon
dried oregano
▢
2
cups
mixed frozen vegetables
peas, carrots, green beans and corn
Instructions
▢
Prepare farro as indicated in the package. Set aside.
▢
Heat a medium skillet over medium-high heat for 1 minute. Place the oil, onion and garlic in the skillet and sauté for about 3 minutes.
▢
Add the ground beef and cook for about 8 minutes over medium heat
▢
Add the tomatoes and mix well. Add the salt, pepper, oregano and cumin and mix well
▢
Add the frozen vegetables and cook for another 5 minutes over medium heat covered.
Notes
Note: Use pre-cooked and quick cook farro, it cooks in 10 minutes
