Red Rice Bowl with Veggies & Pecans

Ingredients

Cooking your red rice according to the package.
▢
Heat up a pan with olive oil.
▢
Add garlic
golden raisins, and veggies, and sauté.
▢
Once the onions are translucent and your veggies are on the softer side
mix them with your red rice.
▢
Top with pecans and a few extra golden raisins.
Instructions

Start by cooking your red rice according to the package or using your instant pot.
▢
Heat up a pan, and add your olive oil, garlic, and onion.
▢
Sauté for about 3-5 min.
▢
Add the raisins and the veggies and sauté for another 3-5 min or until the veggies are soft.
▢
Add some of the pecans and mixed well.
▢
Once the veggies are on the softer side, it’s time to mix them with your red rice.
