In a food processor or blender, blend the prunes, warm water, vinegar, ginger, and soy sauce. Set aside.
For the Stir fry
Heat a medium skillet over medium-high heat for 1 minutes. Place the oil, onion and garlic in the skillet and sauté for about 3 minutes.
Add the ground chicken and the sauce mix well with the sauté.
Add the salt, black pepper, celery, jalapeño and green beans, mix all the ingredients well and cook for 8 minutes over medium heat or until the chicken is fully cooked.
Add the cilantro and the green onions and mix well. Serve warm.
