In a food processor or blender blend the mushrooms and carrots well.
In a large bowl, combine the beef, the mixture of mushroom and carrots, green onion, garlic and seasoning. Using your hands, mix all the ingredients well.
Divide the mixture into 8 patties and set them on a plate.
Preheat the air fryer to 400 degrees F.
Add the patties and cook for 16 minutes, flipping halfway through. You’ll want to use a meat thermometer to register an internal temperature of 160 degrees F.
Serve warm. Store leftovers in a sealed container in the refrigerator for up to 4 days. Freeze up to 6 months.
