This is one of my favorite Spanish dishes. Easy to make and great for brunch parties.

2 lbs. potatoes
1 cup onion, chopped
8 eggs
7 tbsp. olive oil
Salt

Heat oil and add peeled, thin sliced potatoes. After 5 minutes add onion and salt. Cook over high heat until soft and strain in colander; save excess oil. Fold potatoes into beaten eggs. Heat 3 tablespoons of reserved oil in a frying pan. When it starts to smoke add egg and potato mixture. Lower the heat and let the tortilla cook slowly. When it is still slightly runny inside, flip it over so that the other side cooks for a few seconds and gets brown.
